Serves 2 as a main or 4 as a side dish
1. Cook the quinoa as per the instructions. Remove from hear, fluff the quinoa and leave to cool
2. In a medium bowl, mix the cooked quinoa, cucumber, avocado, olives, cherry tomatoes, green onion and feta
3. Whisk together olive oil and lemon juice and pour over the salad. Garnish with some parsley and season with salt and pepper to taste
4. You can either chill in the fridge for a couple of hours or serve immediately!
