Crispy, crunchy, with sweet flavours of pineapple coconut collagen.

Ingredients
- 500g chicken mince
- 2 cups shredded sweet potato
- 1/4 cup chopped spring onion
- 2 tbsp coconut flour
- 1 tbsp olive oil
- 2 sachets Brilliance Pineapple Coconut Collagen
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2- 1 tsp chilli (optional)
- 1 tsp paprika
- Salt and pepper
- 1/2 cup gluten free breadcrumbs
- 1 egg
Method
- Preheat oven to 200C and line a baking tray with baking paper
- In a mixing bowl combine chicken mince, shredded sweet potato, spring onion, coconut flour, olive oil, Brilliance collagen, and spices
- Mix together
- Roll into bite sized pieces and dip into whisked egg, then roll into breadcrumbs and place onto baking tray
- Repeat
- Cook in oven for 25-30 minutes
- Let cool and enjoy!
