Ingredients
- Kale, chopped
- Baby Spinach
- Baby Tomato’s
- Avocado, diced
- 2-3 Radishes, thinly sliced
- 6 Brussel Sprouts, steamed and halved
- 1 bunch Asparagus, trimmed
- 2 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp salt
- 1/4 cup sunflower pepitas
- 5 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp maple
- 1/2 tsp Dijon Mustard
- 1 sachet Kissed Earth Pineapple and Coconut Brilliance Collagen
Method
- Prepare salad dressing by combining olive oil, apple cider vinegar, maple, mustard and Pineapple Coconut collagen in a small jar. Whisk to combine
- In a saucepan steam asparagus for 5 minutes
- Drain liquid and season asparagus with olive oil, garlic powder, and salt. Cook until tender, about 10 minutes. Remove from heat
- Prepare salad by combing remaining ingredients in a large bowl, placing asparagus and brussel sprouts throughout
- Drizzle with pineapple coconut dressing
- Enjoy!
