Strawberry Jam Scrolls with Replenish

Ingredients

  • 1 cup Natural Coconut Yoghurt 
  • 1 1/2 cup self raising flour
  • 2 scoops Kissed Earth Replenish Vanilla Protein
  • 2 cup strawberries 
  • 1 tbsp maple syrup 
  • 2 tbsp chia seeds 
  • Icing:
  • 1/4 Natural Coconut Yoghurt 
  • 1 tbsp monk fruit icing sugar 
  • 1 tbsp water 

Method

  1. Preheat oven to 180C and line a square baking tin with baking paper
  2. In a mixing bowl combine 1 cup Coconut Yoghurt, Replenish Vanilla Protein and self raising flour
  3. Fold together until dough forms
  4. Transfer to a floured surface and knead until smooth
  5. Place baking paper on top of dough, and roll out to a thin rectangle shape
  6. In a blender combine 2 cup strawberries, maple syrup and chia seeds
  7. Blend until smooth
  8. Smooth evenly over dough mixture 
  9. Starting from the long end, carefully roll dough tightly
  10. Cut into 6 scrolls using dental floss
  11. Bake for 20-25 minutes
  12. Combine 1/4 cup Coconut Yoghurt, monk fruit sweetener and water for icing and smooth on top of scrolls or use remaining strawberry jam to spread on top
  13. Enjoy!
