Sticky Date Pudding with Brilliance

Deliciously divine mini sticky date puddings with brilliance collagen.

Ingredients

  • 1 cup gluten free flour
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla bean
  • 1 tsp cinnamon
  • 4 sachets Kissed Earth Brilliance collagen
  • 1/2 tsp salt
  • 1 cup coconut milk
  • 6 medjool dates
  • 1/4 cup olive oil
  • 1 tbsp maple syrup
  • 1 cup canned coconut milk
  • 1/2 cup coconut sugar
  • 2 tbsp coconut oil

Method

  1. Preheat oven to 180 C
  2. In a mixing bowl combine, flour, chia seeds, baking powder and soda, 1 tsp vanilla bean, cinnamon, salt and 2 sachets of brilliance collagen
  3. Prepare wet mixture by combing pitted medjool dates, olive oil, maple syrup and 1 cup coconut milk in a blender
  4. Pour wet mixture into dry mixture and stir gently to combine
  5. Transfer to a silicone muffin pan and bake for 20-25 minutes
  6. Prepare sticky date sauce by combining 1 cup canned coconut milk, coconut sugar, coconut oil, 1 tsp vanilla bean and 2 sachets of brilliance collagen in a saucepan over medium heat
  7. Bring to a boil and then stir on a low heat for 10-15 minutes
  8. Sauce will continue to thicken once removed from heat
  9. Let the mini sticky dates cool once cooked
  10. Drizzle sauce over sticky date and enjoy!
