Deliciously divine mini sticky date puddings with brilliance collagen.

Ingredients
- 1 cup gluten free flour
- 1 tbsp chia seeds
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp vanilla bean
- 1 tsp cinnamon
- 4 sachets Kissed Earth Brilliance collagen
- 1/2 tsp salt
- 1 cup coconut milk
- 6 medjool dates
- 1/4 cup olive oil
- 1 tbsp maple syrup
- 1 cup canned coconut milk
- 1/2 cup coconut sugar
- 2 tbsp coconut oil
Method
- Preheat oven to 180 C
- In a mixing bowl combine, flour, chia seeds, baking powder and soda, 1 tsp vanilla bean, cinnamon, salt and 2 sachets of brilliance collagen
- Prepare wet mixture by combing pitted medjool dates, olive oil, maple syrup and 1 cup coconut milk in a blender
- Pour wet mixture into dry mixture and stir gently to combine
- Transfer to a silicone muffin pan and bake for 20-25 minutes
- Prepare sticky date sauce by combining 1 cup canned coconut milk, coconut sugar, coconut oil, 1 tsp vanilla bean and 2 sachets of brilliance collagen in a saucepan over medium heat
- Bring to a boil and then stir on a low heat for 10-15 minutes
- Sauce will continue to thicken once removed from heat
- Let the mini sticky dates cool once cooked
- Drizzle sauce over sticky date and enjoy!
