Glowing Collagen Gingersnap Biscuits

Chewy, crunchy, collagen goodness full of Autumn spices. 

These gingersnaps are the perfect balance of crisp and chewy, complete with luminous collagen to help you glow from within (GF | DF)

Makes 15

Ingredients

  • 2 cup gluten free flour blend 
  • 2 tsp ginger 
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt 
  • 1/2 tsp nutmeg
  • 2 sachets Luminous Unflavoured collagen 
  • 1/2 cup vegan butter room temperature
  • 1/4 cup molasses  
  • 1/2 cup coconut sugar 
  • 1/4 cup coconut milk (or any non dairy milk) 
  • 1/4 cup granulated sugar (for rolling the mixture in)

Method

  1. Preheat oven to 180 C and line a baking tray with baking paper 
  2. In a large mixing bowl combine flour, baking soda, ginger, cinnamon, salt, and nutmeg
  3. In a separate bowl combine butter, molasses, coconut sugar and coconut milk
  4. Using an electric mixer beat until combined
  5. Pour on to dry mixture and beat until just combined 
  6. Taking a tablespoon of mixture shape into a ball and roll in sugar
  7. Press to flatten into biscuit
  8. Repeat
  9. Bake for 12 minutes and then let cool for 10 minutes
  10. Biscuits will continue to set when cooling
