Divine Chickpea Curry

Ingredients

  • 1 400ml tin chickpeas, drained and rinsed
  • 1 onion, thinly sliced
  • 3 garlic cloves, thinly chopped
  • 1 tbsp olive oil
  • 1 400ml tin coconut milk
  • 1 400g tin crushed tomatoes (optional to thicken mixture) 
  • 1 tbsp curry powder
  • 3 tsp Kissed Earth Divine Women
  • 1 tsp turmeric powder
  • 1 tsp coriander seeds
  • Salt and Pepper to taste 
  • Cooked rice, lime wedges and coriander to serve

Method

 

  1. In a large pan, heat olive oil over medium heat. Add onion and garlic and sauté for 5 minutes
  2. Pour in the chickpeas, coconut milk, crushed tomatoes and spices
  3. Add 1/4 cup of water to mixture
  4. Let simmer for 20 minutes, stirring occasionally
  5. Serve with rice, lime wedges and coriander.
