Ingredients
- 1 400ml tin chickpeas, drained and rinsed
- 1 onion, thinly sliced
- 3 garlic cloves, thinly chopped
- 1 tbsp olive oil
- 1 400ml tin coconut milk
- 1 400g tin crushed tomatoes (optional to thicken mixture)
- 1 tbsp curry powder
- 3 tsp Kissed Earth Divine Women
- 1 tsp turmeric powder
- 1 tsp coriander seeds
- Salt and Pepper to taste
- Cooked rice, lime wedges and coriander to serve
Method
- In a large pan, heat olive oil over medium heat. Add onion and garlic and sauté for 5 minutes
- Pour in the chickpeas, coconut milk, crushed tomatoes and spices
- Add 1/4 cup of water to mixture
- Let simmer for 20 minutes, stirring occasionally
- Serve with rice, lime wedges and coriander.
